    Serves 8-10.
    1 1/2 lbs. lean ground beef
    1/2 lb. lean ground pork
    2 eggs, lightly beaten
    1/2 cup ketchup
    1/3 cup water
    1 (8-oz.) can tomato sauce
    3/4 cup (1-Minute or Old-Fashioned) oats
    1 onion, chopped
    1 or 2 grated carrots
    2 ribs celery, chopped
    1 red or yellow bell pepper, chopped
    1 or 2 cloves garlic, minced
    1/2 cup Italian-style bread crumbs
    2 tbls. chopped fresh parsley
    1 1/2 tsps. salt or to taste
    1/2 tsp. black pepper, or to taste
     1/8 tsp. cayenne pepper or to taste

    Optional topping:
    1/2 cup ketchup
    3 tbls. brown sugar
    1 1/2 tsps. dry mustard
    Pinch of cayenne

    1. In large mixing bowl, add all ingredients and stir with large spoon until well mixed.
    2. Place meat in 8 1/2 x 41/2  -inch loaf pan.
    3. With fingertips, lightly push edges of meat down around the pan, which will form a rounded top for the meatloaf.
    3. Place in preheated 350-degree oven for about 60 minutes or until cooked through.
    Note: After about 30 minutes, I pour off the fat
    that has accumulated in the pan. I also pour it off at the end of the baking time when I take it out of the oven.

    Topping: I add the topping ingredients after 30 minutes of baking and after I have poured the fat out of the pan.
