It's the fruit that is America's favorite vegetable -- the tomato.
Botanically speaking, the tomato is a fruit. However, as a result of a tariff dispute, the United States Supreme Court declared it a vegetable in 1893.
Tomatoes provide dietary fiber, iron, potassium and a hefty dose of vitamin C.
When selecting tomatoes for our Spinach-Stuffed Baked Tomatoes, look for those that are plump, firm and feel heavy for their size. And don't forget the sniff test -- tomatoes should be noticeably fragrant.
Store tomatoes at room temperature, not in the refrigerator. Cold temperatures produce a tasteless, mealy tomato.
